Chicken Tortilla Soup

For a 3 quart crock pot
1.5 lb chicken, cooked and shredded (I usually cook 3 boneless, skinless breasts in the oven for 40 mins. and then throw them in the crock pot…it’ll shred on its own after awhile).
1 10 oz can of enchilada sauce (in the Mexican food section)
1 14oz can of diced tomatoes (plain or garlic is good)
1 4oz can of green chilies (in the Mexican food section)
1 Medium onion, chopped
2 Cloves of minced garlic
2 14 oz can of chicken broth
½ teaspoon of cumin
1 teaspoon of chili powder
1 teaspoon of salt
¼ teaspoon of black pepper
1 10 oz bag of frozen white corn
1 tablespoon of cilantro
Sprinkle oregano, parsley and red pepper to taste.

Throw everything in the crock pot and cook on low for 6-8 hours or on high for 3-4 hours. Good to freeze for later.

Tips for toppings:
Shredded parmesan or cheddar, sour cream, diced green onion. Brush veggie oil on tortilla chips and bake them in the oven for 5 mins. So they don’t get soggy in the soup! I like Fresh Gourmet Tortilla Strips, Santa Fe Style (by the croutons).

A good friend of mine lost his wife back in October she was 37 yrs old. Apparently her family is very dysfunctional and as a result he is now raising three kids(1 biological and two step children) on his own(youngest child is his – ages are 5, 11 and 15). I feel so bad that he has found himself in this situation at the young age of 37. He is a very private person but has opened up to me about some very personal things and my heart is bleeding for him. I am also a single parent to an 11 yr old boy so I understand exactly what he is going through. I would like to help in some way what can I do to really make a difference? I mean neither of us a lot of money but I know there must be something that I can do to lessen the stress. The holidays are coming and the kids are sad… I can see it in their eyes. I was thinking to make dinner for them and drop it off tomorrow becos he has said several times that he doesn’t know how to cook.

Please help…

Fish recipes for someone who is picky with fish?

I don’t mind fish. I really like salmon baked on a cedar plank, and tuna salad – I love fish and chips.

However, I hate anything that tastes or smells fishy. I don’t know which kinds of fish are more likely to have that smell and taste – or if its a certain way of packaging/preparing before buying that makes fish more likely to taste like that.

I stay away from making fish because of it, but I would really like to eat it more and try different kinds.

Any recipes or tips on buying fish?

How would you deal with a difficult husband that is hard to please?

I am having problems with him for some time now.
Here are the problems and here is why I say he is difficult to deal with, but I still try to deal with him diplomatically…

1. He nit picks at everything I do or try…
2. He micro manages me
3. He calls me really bad names
4. he threatens to leave me and take our son away
5. He ignores our son at all costs, yet calls me a terrible mom…when I am the 100% provider of cleaning up after him…and the hubby….cooking100%, chores 100%, diaper changing 100% taking time with him and taking the baby to the park and play dates etc…etc…teaching him things quality time with the baby etc..
yet when he wanted his dad to kick a soccer ball with him he says go away go to your mommy..
6.he tells me a lot that he only married me cuz he felt sorry for me and he does not want to be with me.
7. he is very honery and cantancerous alot.
8.especially when he drinks he is real mean and calls me every name in the book but i ignore it but he still goes on and on…i act like he is not there when he is on the war path but it seems to not help.
9.i am job hunting for a full time job cuz we need another income but his mom wont babysit but maybe 1 to2 days a week yet hubby does not want 2 pay for day care and says he does not want me to pay either cuz we would be losing out on money and it is 200 bucks a week in calif for daycare for a lil 2yr old in diapers.
i feel at a catch 22 cuz i want a job bad a full time job so i can gain independance from this mean man and gain self esteem form my bashed self esteem that i have .yet…if i do who is gonna take care of my baby? and if i work nights…he does nto want to take care of him…he ignores him bad i mean ignores him bad.
9.he has a grown daughter who will not go near him cuz of how he is.
10.my teen daughter moved into her daddys house cuz of my husband. he would get mad when she would go in the kitchen to get say a yogurt or a snack. he gauges what we eat and says that we are eating HIS FOOD. yes he works but i am the wife and i do all the cooking n cleaning but he says she and me we do not deserve it…the ood and toilet paper etc…
11. I am not a spend thrift either i do not go shopping…and only time i do is at the supermarket for only needs like food…and bargin shop at that. last time i bought me a pair of jeans and shoes was 3 yrs ago. i only own 3 pair of jeans and 2 pair of shorts and no nice work clothes …this is all true…i am frustrated and i need advise as to how i should handle a difficult person like him?
yes he has taken money from me when i did work yrs ago i would hand my check all of it to him.

Concerned About What’s in your Commercial Pet Food? Try These Homemade Cat Food and Treats

Every day lately, it seems there is another pet food recall, warning dog and cat owners not to feed their pets different brands of foods. This is getting scary. Who knows which pet food will be recalled next. Though I am still using the kibble my cats normally eat, I am now supplementing my pets with a few homemade recipes. These are not meant for feeding your pets forever, since I”m not a vet or nutritionist but they are good for filling their furry tummies while we wait out the lowdown on the canned foods, which seem most affected by these pet food recalls. Here are the basic recipes I am using, don’t add other ingredients unless you know for sure that they don’t hurt your pets. We all know chocolate is off-limits to pets, as are other foods such as onions. Stick with these ingredients, which seem to be pet safe, according to pet experts I’ve read about.

Homemade Cat Food

2 cups ground chicken, lean beef or turkey, thoroughly cooked and diced;

4 cups rice, cooked in chicken or beef broth;

1/2 cup potatoes, ground;

1/4 cup spinach or carrots, ground;

1/4 cup green beans, ground;

2 tbsp melted butter;

dash of garlic powder

Mix everything together in large pot or bowl. Make sure it is completely cool before feeding to your cat. Store in covered container in refrigerator.

Homemade Cat Treats

1 1/2 cup oats, ground;

1/4 cup butter;

1/2 cup flour;

1/2 cup chicken broth;

1/4 cup cubed or shredded American or mild cheddar cheese -or- shredded chicken

Mix all ingredients together, form small cookies and bake on greased cookie sheet until done at 350 degrees. Roughly 25 minutes but check as ovens vary. Do not overcook.

Our pets deserve food that is safe, so hopefully, this current pet food crisis will alert the authorities to make sure they buy quality products and be more careful of what they put in their pet food recipes. Cats have specific nutritional needs so don’t feed them any of these recipes on a long term basis, as I do not know the breakdown of nutritional value for them. But, by using fresh, healthful ingredients, cooking the meat thoroughly and storing the food you make in the refrigerator, it can help to tie your kitty over until it is safe to go buy food at the store again. Enjoy.

Easy Seafood Bisque Recipe

3 tablespoons butter
2 tablespoons chopped green onion
2 tablespoons chopped celery
3 tablespoons flour
2 1/2 cups milk
1 teaspoon pepper
1/2 teaspoon onion salt
1 tablespoon tomato past
1 cup heavy whipping cream
1/2 pound medium sized cooked shrimp
1/2 pound imitation crab meat

1. Cut the shrimp into smaller pieces, 3 to 4 pieces per shrimp
2. Chop the crab into small pieces
3. Melt butter in a pot
4. Add green onion and celery
5. Saute until tender
6. Stir in the flour for 30 seconds
7. Add the milk and continue stirring for a couple of minutes until it thickens
8. Add pepper, tomato paste, heavy cream, crab and shrimp
9. Continue cooking until it thickens
